Simple sheet pan Fajitas, high protein meal prep or for a healthy family dinner made in minutes using only one pan

Shopping List

Produce

1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1/2 red or yellow onion
2 jalapenos

Proteins

32oz flank steak

Dairy Eggs

60g Mexican cheese

Grains Bakery

6 or 7 (one pack) of low carb (or regular) burrito sized tortillas.

Pantry

15g honey
2-3 tbsp taco seasoning
(optional) favorite sauces (chipotle sauce, sour cream, salsa. etc.)

Dinner
Ingredients:
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1/2 red or yellow onion
  • 2 jalapenos
  • 32oz flank steak
  • 60g Mexican cheese
  • 15g honey
  • 2-3 tbsp taco seasoning
  • 6-7 low carb tortillas
Instructions:
1. preheat oven to 425 degrees

2. Slice all vegetables and steak cutting against the grain and put onto pan that has foil on top (for easy clean up. ) - season with taco seasoning and honey.

3. cook at 425 degrees for 8 minutes then broil for 5 minutes, taking pan out and mixing then putting back in over for another 3 minutes.

4. after taking out sprinkle on Mexican cheese

5. wrap in tortilla.

6. optional to add your favorite sauces (chipotle sauce, sour cream, salsa. etc.)
